Semur Daging (Beef Cooked In Soy Sauce)
Ingredients
- 500g chuck or round steak
- 2 tablespoons peanut oil
- 1 large onion, finely chopped
- 2 cloves garlic, crushed
- 1 teaspoon freshly grated ginger
- 1/2 teaspoon coarsely ground black pepper
- 1/4 teaspoon each, ground cardarmom, cinnamon & nutmeg
- 1/8 teaspoon ground cloves
- 3 tablespoons dark soy sauce
- 1 tablespoon palm sugar ( brown sugar makes a good substitute )
- 2 tablespoons tamarind liquid ( white vinegar is a good substitute )
- 1 cup hot water
Method
Cut meat into small cubes. Heat oil in a saucepan and fry oinion until soft
and transparent. Add garlic and ginger and fry again, stirring until onions
start to colour. Add meat and fry, stirring, until it loses its redness.
Add spices, soy sauce, sugar, tamarind liquid and water. Bring to the boil,
lower heat, cover and simmer untill meat is tender and gravy is reduced.
Uncover after 1 1/4 hours to help reduce the liquid. Serve with white rice
and vegetables.
