Spaghetti Marinara

In a shallow fry pan heat 2 tablespoons of the olive oil, add onions and garlic, cook for 2-3 minutes. Stir in white wine, add the crushed tomatoes, herbs and spices and thicken with tomato paste. Bring to the boil, reduce heat and simmer for 20 minutes, season with black pepper.

In a separate non-stick frying pan or wok, saute the marinara mix in the remaning oil until just cooked (say 2 - 3 minutes), then add to the sauce and cook for a further 3 minutes. Remove the bay leaf.

Serve with pre-cooked spaghetti and garnish with some fresh herbs.
